This time I want to teach you how to make a creamy ice cream, with an unmistakable aroma of cinnamon, and with the surprise of finding small soft pieces of apple in the middle. Wonderful!

Ingredients:
2 large apples, peeled, cored, and cut into very small pieces
30g unsalted butter
50g brown sugar
1 teaspoon ground cinnamon, plus a little extra for garnish
nutmeg
2 egg yolks
100g sugar

350ml of cream
120ml of milk
vanilla extract

Preparation:
- Place the butter in a pan and heat over medium heat.
- Once it has melted, add the apple pieces, brown sugar, cinnamon and nutmeg and mix well with a wooden spoon.
- Let it cook, stirring constantly, for about 3 minutes or until the apple starts to soften.
- Remove and let cool.
- Meanwhile, prepare the ice cream – using a mixer, beat the egg yolks with the sugar for a few minutes, until you obtain a pale yellow cream.
- Add a pinch of salt, the cream, the milk and a few drops of vanilla and continue beating until the cream begins to thicken slightly.
- Refrigerate until cold.
- Turn on the ice cream maker and add the cream mixture, following the manufacturer's instructions.
- When you notice that it starts to thicken with freezing, add the apples – and all the syrup that has formed in the pan – and let the machine reach the end of the recommended time.
- Finally, pour into a container, cover with cinnamon powder and it's ready to serve.
