Apple and Cinnamon Ice Cream

This time I want to teach you how to make a creamy ice cream, with an unmistakable aroma of cinnamon, and with the surprise of finding small soft pieces of apple in the middle. Wonderful!

Ingredients:

2 large apples, peeled, cored, and cut into very small pieces
30g unsalted butter
50g brown sugar
1 teaspoon ground cinnamon, plus a little extra for garnish
nutmeg
2 egg yolks
100g sugar
sal
350ml of cream
120ml of milk
vanilla extract

Preparation:

  1. Place the butter in a pan and heat over medium heat.
  2. Once it has melted, add the apple pieces, brown sugar, cinnamon and nutmeg and mix well with a wooden spoon.
  3. Let it cook, stirring constantly, for about 3 minutes or until the apple starts to soften.
  4. Remove and let cool.
  5. Meanwhile, prepare the ice cream – using a mixer, beat the egg yolks with the sugar for a few minutes, until you obtain a pale yellow cream.
  6. Add a pinch of salt, the cream, the milk and a few drops of vanilla and continue beating until the cream begins to thicken slightly.
  7. Refrigerate until cold.
  8. Turn on the ice cream maker and add the cream mixture, following the manufacturer's instructions.
  9. When you notice that it starts to thicken with freezing, add the apples – and all the syrup that has formed in the pan – and let the machine reach the end of the recommended time.
  10. Finally, pour into a container, cover with cinnamon powder and it's ready to serve.
